The Perfect Alternative

For centuries humans have been blending the nutrient dense flesh of tree nuts with water in order to make an opaque, white liquid that’s almost identical in appearance to dairy milk, but quite different in its taste and nutrition. Historically they were mostly used as alternatives during dairy-restrictive religious periods or sometimes as medicinal remedies, however, these ‘last resort’ options of the past are quickly becoming the primary choice for many modern consumers. 

And for good reason.

The upsides of ‘milks’ made with nuts are numerous, from the clean & nutty flavours to the range of nutritional benefits. Many people are choosing to replace their dairy intake with plant-based alternatives for a variety of reasons, but here we like to focus primarily on health. 

While dairy products have been a part of human diets for centuries, many people still struggle with their digestion and despite common beliefs, in many ways they are nutritionally inferior to some of their nut-based alternatives. 

For example, calcium is the possibly the most valued benefit of dairy milk but almonds are the highest-ranking nut in terms of calcium with one cup containing 37% of the daily recommendation, while cow’s milk only sits around 23%  ; quite a significant difference. 

Nutmilk is really easy to make and stores very well, comfortably up to one week, with proper sanitation and refrigeration.  

Combining a variety of raw nuts is the optimal way of getting a more complete nutritional profile (as well as some interesting flavours), as each variety is high in one area while lower in another. In order to stay true to our brand, we only use Mediterranean nuts, but any combination is a good one as long as it tastes good! In our particular combination we use almonds, pine nuts and pistachios.  

A good practice is to soak the raw nuts in filtered water with a little sea salt overnight, then drain and rinse them thoroughly before blending in your recipe. This should help remove some of the phytic acids that are naturally present in the nuts.
